Based on the success of Brewhouse CSS were again selected to do the implementation of the new phase consisting of the Fermentation & Maturation cellars.

This again included one more batch engine, redundant Archestra application servers, and the complete rewriting of all the software across 9 TSX Quantum 534 14A CPU's.

The major challenge of the fermentation project is that all commissioning had to be done during normal production, without affecting the process. The emphasis was like during the brewhouse project, to complete a rigorous and strict Factory Acceptance Test (FAT) prior to commissioning. This includes systematic negative testing as well.

The expertise and precise planning of the CSS project team together with thorough FAT testing which included all the process people resulted in that after one year of software coding commissioning was done smoothly during a three week period without effecting production negatively.
